Instructions
  1. Preheat oven to 375°F.
  2. Heat an oven proof skillet, with the oil, over at an oven proof skillet, with the oil, over medium-high heat. Season the chicken with salt and pepper. Sear the chicken about 4 minutes on each side, then remove the chicken to a plate.
  3. Add the onions and garlic: cook until onions start to soften. Add the diced tomatoes, capers, olives, and pepperoncini (plus the liquid). Gently stir to combine; bring to a bubble.
  4. Put the chicken back into the skillet. Once boiling, place the lid on top of the pan. Transfer to the oven and bake for 30 minutes. *** While this is baking, start making the sides. *** Remove the pan from the oven and remove the lid. Turn the oven on broil. Place the pan back into the oven and broil until chicken browns on top, about 5 minutes.
  5. Remove from the oven and let cool for a few minutes before serving.
Recipe Notes

Zucchini and onions: Brown 1 cup of sliced onions in 2 tsp. of olive oil, sprinkle with salt (or salt substitute) and pepper. Add 3 cups of sliced fresh zucchini, cook until almost done. Sprinkle with 4 tsp. grated parmesan cheese and cook 1 more minute.

One serving of chicken with 1/2 cup of zucchini and onions and 1 cup of fresh strawberries  (or any fruit from the 50 calorie list), and 7 raw walnut halves and a tall glass of unsweetened ice green tea.

500 Calorie Meal

One serving of chicken with 1 cup of zucchini and onions and 1 cup of fresh pineapples (or any fruit from the 100 calorie list), and 7 raw walnut halves and a tall glass of unsweetened ice green tea.
