Instructions
  1. Heat a skillet or wok, add oil, then garlic & shallots: sauté for 1 minute.
  2. Add the tomatoes & soy sauce - cook for another 3 minutes
  3. Add the cauliflower, lemon juice, stock, onion, and scallions. Reduce heat and cook until cauliflower is tender-crisp, about 11 minutes, stirring frequently. Add a little water if necessary to prevent sticking. Do not overcook.
  4. In a serving dish place cauliflower and sprinkle with cilantro.
  5. If you desire a spicy dish, add thinly sliced chile peppers (or chili flakes) with the shallots and garlic.
  6. If you don't have good fresh tomatoes, use 1 cup of canned, diced tomatoes, drained of excess juice.
  7. Serving Size = 1/5 of Recipe
