Ingredients
- 2 2.5 ounce packs Bumble Bee albacore tuna in water
- 1 medium red potato
- 1/2 pieces Green yellow, red or orange bell pepper cut into small
- 2 teaspoons fresh or dried dill weed
- 2 teaspoons extra virgin Olive oil for 400 Calorie meal see note in 500 Calorie Meal
- Salt and pepper to taste

Instructions
- Cook potatoes in microwave. Cut the potatoes into uniform cubes. Place in microwave safe bowl and drizzle with oil. Cover with lid and cook on high for 9 minutes. Pierce with fork to determine doneness.
- In a medium sized bowl combine all the ingredients.
Recipe Notes
400 Calorie Meal
One entrée with 1 cup of fresh grapes (or any fruit from the 50 calorie list).
500 Calorie Meal
One entrée with 1 fresh banana (or any fruit from the 100 calorie list), and add an additional tsp. of olive oil or enjoy 10 almonds or 5 walnut halves.
