Instructions
  1. Heat half of the oil in a large nonstick skillet over medium heat. Add tofu, cumin, chili powder, and 1/4 teaspoon salt and cook, stirring, until the tofu begins to brown, 4 to 6 minutes. Transfer to a bowl.
  2. Add the remaining oil to the pan. Add corn, zucchini, scallions and the remaining salt. Cook, stirring, until the vegetables are just tender, about 3 minutes.
  3. Return the tofu to the pan and cook, stirring, until heated through, add the cheese, and cook about 2 minutes more, or until the cheese is melted. Remove from the heat. Top each serving with 2 tablespoons salsa and 1 tablespoon cilantro.
  4. Place 3/4 cup of tofu with 2 slices of tofu turkey inside tortilla and fold in thirds.
