
Smoked Salmon with Scallion Sauce Sandwich

Ingredients
- 4 oz. plain fat free Greek yogurt
- 1 scallion white & light green parts, finely chopped
- 4 slices Pepperidge Farm Small Slice Whole Grain 15 Grain Bread or any bread from the 70 - 80 calorie list
- 6 oz. smoked salmon or lox thinly sliced
- 1 head Belgium endive leaves separated, washed, and dried well
- 2 tsp. capers chopped
- 1/2 tsp. lemon juice

Instructions
- Beat Greek yogurt, chopped capers, lemon juice and chopped scallion together in a small bowl with an electric mixer or by hand. Pepper to taste. Spread the mixture evenly on one side of each slice of bread (all 4 slices).
- Layer the salmon (3 ounces for each) over the mixture on 2 of the slices. Then top the salmon evenly with the endive leaves.
- Place the remaining bread slices over each sandwich and press down firmly. Wrap well, and keep chilled in refrigerator until ready to serve. Cut the sandwiches in half before serving.
