
Skillet Parmesan Zucchini and Pasta

Ingredients
- 1/2 lb. pasta whole grain spaghetti or your favorite shape
- 1 medium red bell pepper chopped
- 4 small zucchinni thinly sliced about 1 pound
- 1/2 cup pasta sauce such as Classico Marinara Sauce with Plum Tomatoes Red Sauce or see the exchange list for other healthy options
- 3/4 cup Mozzarella fat free cheese shredded such as Kraft Natural
- 2 tablespoons Parmesan cheese --- grated

Instructions
- Cook the pasta as directed on the box. If you want to cook the whole box, just double the entire recipe.
- Cook peppers, and onions in a large non-stick skillet over medium heat for 6 minutes. Add the zucchini, cook and stir for 3 minutes.
- Add pasta sauce, cover and cook for 8 more minutes or until the veggies are tender. Stir occasionally.
- Top with the cheese, cover and cook for 1 minute or until the mozzarella is melted.
- Drain the pasta, and place on platter. Top with sauce or stir the sauce into the pasta.
