Instructions
  1. To make dressing: Puree carrot, carrot juice, miso, vinegar, 2 tablespoons of oil, ginger and 1 teaspoon garlic in a blender or food processor until smooth.
  2. To make Shrimp: Soak wooden skewers in water for at least 1 hour. Combine honey, 2 tablespoons of oil, soy sauce, black bean-garlic sauce and 2 teaspoons of garlic in a small bowl. Spread half the marinade in a large baking dish and top with shrimp. Spread the remaining marinade over the shrimp, covering completely.
  3. Preheat grill to medium-high. Oil the grill rack. Skewer shrimp and grill until pink all over. To serve, toss greens with the dressing. Divide among 6 plates and top with 3 oz. of shrimp.
