Instructions
  1. Sauté veggies in oil until translucent.
  2. Add tomatoes and spices. Stir.
  3. Make wells using wooden spoon. Crack eggs into wells.
  4. Bake at 325 degrees Fahrenheit for 8-10 minutes or until eggs are set.

400 Calorie Meal

Option # 1: One serving of shakshuka with ¾ cup fat free cottage cheese, 100 calorie slice of bread   Whole Grain Breads (sugar free jelly) and 1/2 pear, or any fruit from the 50 calorie list.

Option # 2: One serving of shakshuka with 3 ounces smoked salmon (or lean ham, turkey or a different fish), 100 calorie slice of bread (sugar free jelly) and an orange or any fruit from the 50 calorie list.

500 Calorie Meal
