Instructions
  1. Preheat oven to 375° F.
  2. Coat the beets with oil; then sprinkle with salt (if desired), and pepper
  3. Place the beets in a baking dish and roast for 25 to 30 minutes, or until tender when pierced with a fork.
  4. Remove the dish from the oven, add vinegar, and mix with a spatula, scraping any caramelized bits off the bottom of the dish. Garnish with fresh parsley, and serve.
