- 2 teaspoons canola oil
- 1/4 teaspoon salt or salt substitute
- 1 tablespoon balsamic vinegar
- 1 teaspoon finely chopped fresh parsley optional
- 1/2 teaspoon freshly ground black pepper

Instructions
- Preheat oven to 375° F.
- Coat the beets with oil; then sprinkle with salt (if desired), and pepper
- Place the beets in a baking dish and roast for 25 to 30 minutes, or until tender when pierced with a fork.
- Remove the dish from the oven, add vinegar, and mix with a spatula, scraping any caramelized bits off the bottom of the dish. Garnish with fresh parsley, and serve.
