Instructions
  1. In a large skillet heat the oil over medium-high heat. Add the veggies and cook for 8 minutes.
  2. Beat the eggs with the spices and pour over the veggies. Scatter the cooked meat on top. Cover and heat for 5 minutes.
  3. Add the cheese and cook until the cheese is melted or to the desired doneness.
  4. If using avocado, add right before serving.
  5. Sprinkle with salt and pepper if desired.
