Instructions
  1. Preheat oven to 425ºF. Line a large rimmed baking sheet with foil; coat with nonstick spray, or just coat baking sheet with nonstick spray.
  2. Toss cauliflower and onion with oil on baking sheet; Mix together curry powder, 1/2 tsp. cumin powder, and 1/2 tsp. salt; and add to veggies, toss again. Spread mixture into an even layer.
  3. Roast vegetables for 15 minutes; remove from oven and toss. Return to oven and roast until tender, and golden in spots, 11-15 minutes more.
  4. In a medium bowl, combine mint, yogurt, cucumber, and the remaining 1/2 tsp. cumin seeds and 1/2 tsp. salt for raita.
  5. Serve roasted vegetables topped with raita or serve raita on the side as a dip.
  6. Serving size is 1 cup of vegetables with 3 tbsp. of raita sauce.
