Ingredients
- 6 cups chopped napa cabbage or substitute green cabbage about 1 pound
- 3 tablespoons sea salt
- 3 cloves Garlic minced
- 2 tablespoons rice vinegar
- 1/2 tablespoons chili-garlic sauce
- 1 tablespoon fresh ginger grated
- 1 tablespoon soy sauce low sodium
- 1 teaspoon Asian fish sauce
- 1 teaspoon sugar
- 1/4 cup green onions sliced

Instructions
- Toss cabbage and salt in a large bowl until well combined.
- Let stand for 30 minutes, then rinse and drain.
- Squeeze cabbage to remove excess water.
- In a different large bowl, whisk the remaining ingredients, except onions. Mix until sugar is dissolved.
- Add onions and cabbage, toss until well combined.
- Cover & refrigerate for 30 minutes to 3 days.
