Instructions
  1. Pour oil into a medium skillet, heat on medium for 1 minute.
  2. Add onions and cook for 2 minutes.
  3. In a mixing bowl, combine egg beaters, sun dried tomatoes, cheese. Mix by hand for 1 minute.
  4. Add to skillet. Cook for 3 minutes, sprinkle with coarse salt (or salt substitute) and pepper, flip, and finish cooking to your desired doneness.

Add Sugar-less jam if desired, and a large cup of Bigelow Green Chai Tea (with artificial sweetener if desired).
