Instructions
  1. Heat a grill pan over medium-high.
  2. Sprinkle steak with garlic power, 1/4 teaspoon salt, 1/4 teaspoon pepper. Spray pan with olive oil spray. Add steak to pan; cook 4 minutes on each side. Or until desired doneness. Place steak on a cutting board.
  3. Place squash, onion and bell pepper in a large bowl. Add 1 tablespoon oil, 1/4 teaspoon salt and 1/8 teaspoon pepper; toss. Arrange vegetables on grill pan; cook 4 minutes. Chop into bite-size pieces.
  4. Combine remaining 5 teaspoons oil, remaining 1/4 teaspoon salt, remaining 1/8 teaspoon pepper, 1 tbsp. water, vinegar, sugar and cheese. Divide vegetables and tomatoes among 4 plates. Cut steak into thin slices (divided between 4 plates); top with vegetables and vinaigrette.
Smoked Paprika Sweet Potatoes
  1. Preheat oven to 400°F.
  2. Spray cookie sheet with oil spray.
  3. Spread potatoes on cookie sheet and sprinkle with smoked paprika and salt and pepper to taste.
  4. Bake at 400°F for 25 minutes.
  5. Makes 4 1/2 cup servings.
