Grilled Shrimp
  1. Lightly spray pan or grill with cooking spray. Season Shrimp with Old Bay Seasoning. Grill or cook until shrimp turn pink, then turn over and finish cooking until the entire shrimp is pink. Don't overcook.
Marinated Carrot Salad
  1. Bring a medium saucepan of water to a boil. Salt the water, then add the carrots and cook until they are barely tender, about 3 minutes; drain them.
  2. In a large bowl, whish the olive oil with the vinegar, garlic, water, lemon juice, shallot, parsley, mustard and honey, and season with salt and pepper. Add carrots and toss to coat. Refrigerate for at least 4 hours or overnight. Serve the carrot salad chilled or at room temperature.
Wild Rice with Sun Dried Toamtoes
  1. Cook the rice in an abundant amount of boiling salted water in a large pot for 35 to 45 minutes or until the grains have almost doubled in size and are tender, but still chewy.
  2. Toast the pine nuts lightly (dry skillet) until tan and add to rice.
  3. Gently toss all ingredients together to mix.

Serve 4 ounces of shrimp with a serving of Marinated Carrot Salad (or any other 100 Calorie Vegetable or salad),
a serving of Wild Rice with Sun Dried Tomatoes (or any 150 Calorie Rice),
1 cup fresh strawberries (or any other 50 Calorie Fruit)
Enjoy with a large glass of Diet Green Tea.

Add 8 teaspoons of olive oil when grilling or cooking the shrimp. Have one serving of shrimp with a serving of Marinated Carrot Salad (or any other 100 Calorie Vegetable or salad),
a serving of Wild Rice with Sun Dried Tomatoes (or any 150 Calorie Rice),
1 cup fresh strawberries (or any 50 Calorie Fruit).
