Instructions
  1. Prepare an indoor or outdoor grill. Or, heat a skillet on the stovetop.
  2. In a medium bowl, mix together the salsa verde ingredients; set aside.
  3. Pat the scallops dry with a paper towel. In a medium bowl, toss them with the olive oil, salt, and black pepper.
  4. Place the scallops on the grill, flat side down. Turn once, grill until lightly charred and opaque in the center, about 2 minutes per side.
  5. Top the scallops with the chunky salsa verde, and serve.
