
Grilled Clams with Garlic and Lime

- 8 teaspoons Olive Oil
- 3 cloves Garlic peeled and thinly sliced
- 1/2 teaspoon crushed red chili flakes
- 2 Tbsp. flat-leaf parsley minced
- 48 littleneck clams scrubbed, about 3 pounds
- 1 lime --- Juice of 1 lime

- Heat the oil over medium for 3 minutes, add the garlic, red chili flakes, and parsley. Place the sauce in a small cup and set aside.
- Preheat the grill to high. Place scrubbed clams on a piece of foil or on pan with sides --- to catch the juices.
- Cook over direct heat for 8 to 10 minutes, flipping fully opened clams halfway through. (Discard any clams that do not open.) Drizzle the lime juice and sauce into the clam shells and serve.
