Instructions
Chicken Burritos
  1. Gently mix the chicken, cheese, avocado, and cilantro.
  2. Lay a tortilla flat on a plate and add ¼ of the mixture, form a roll. Repeat the process for all four tortillas.
  3. Pour 1 teaspoon of oil into a heated pan or griddle in 4 places; allow enough room for the tortilla. Place all four tortillas on the pan and cook for 2 minutes on medium- high heat. Flip on the other side and cook for another minutes or until the burritos are golden in color. Serve warm.
Tropical Fruit Salad
  1. Drain pineapple chunks, and reserve 1/4 cup of the pineapple juice.
  2. Place mango, pineapple chunks, kiwi, strawberries, and banana, into large serving bowl.
  3. Put 1/4 cup pineapple juice, lime zest, lime juice and honey in a bowl and whisk together until blended. Drizzle over the salad, and toss to coat the fruits well. Sprinkle coconut over the top before serving, if desired.
Mixed Baby Greens Salad
  1. Top 2 cups mixed baby greens, with ½ cup combo of carrots, celery, & green peas, and 2 teaspoons of fat free feta. Pour 1 ½ Tablespoons of Newman's Own Lite Lime Vinaigrette over salad and toss.

One chicken burrito, 1 cup of Tropical Fruit (or any fruit from the 100 calorie list) and a Mixed Baby Green salad (or any 100 calorie salad).  Enjoy with a tall glass of Iced Green Tea.
