Instructions
  1. Cook orzo according to package. Drain and rinse.
  2. Place water, 1/4 cup sun-dried tomatoes, plum tomato, garlic, 2 teaspoons marjoram, vinegar, and 2 teaspoons oil in a blender. Blend until a few chunks remain.
  3. Season chicken with salt and pepper. Heat the remaining 1 tbsp oil in a large skillet over medium-high heat. Add chicken and cook until no longer pink in middle, 3-5 minutes per side. Move to cuting board and tent with foil to keep warm.
  4. Pour tomato sauce in a pan and bring to a boil. Add remaining 1/4 cup sun-dried tomatoes, artichoke hearts and 3 tablespoons of cheese to orzo. Cook, stirring, until heated through, for 1-2 minutes. Slice the chicken and serve the orzo topped with chicken, tomato sauce, and remaining cheese and marjoram.
