
Chickadillo – Chicken Picadillo & a Baby Spinach Salad

- 1 lb. chicken breast (4 oz. each) skinless, boneless, hormone and antibiotic free, cut into thin strips
- 2 tsp. Olive Oil
- 1 large yellow onion finely chopped
- 1 medium green pepper finely chopped
- 1 medium red pepper finely chopped
- 3 cloves Garlic mashed
- 1/3 cup no-salt added tomato sauce
- 1/3 cup low sodium chicken broth
- 1/31 cup fresh lemon juice
- 1/3 cup water
- 1/4 tsp. ground cumin
- 2 bay leaves
- fresh cilantro leaves
- 1 tbsp. capers drained
- 2 tbsp. green olives chopped
- 2 cups baby spinach
- 1/2 cup combo of mushrooms, onions & red bell peppers
- 2 tsp. fat free goat cheese
- sprinkle smoked paprika
- 2 tbsp. Wish-Bone's Fat Free Red Wine Vinaigrette

Baby Spinach Salad with Goat Cheese

- Heat the olive oil in a large skillet over medium heat. Add the onion, peppers and garlic, and sauté until the vegetables are soft, about 5 minutes.
- Add the chicken and stir-fry for another 5 to 10 minutes, until the chicken has cooked through.
- Add the tomato sauce, chicken broth, lemon juice, water, cumin and bay leaves to the vegetables and the chicken.
- Cover the pan and reduce the heat. Simmer for 10 minutes or until the chicken is tender.
- Remove the bay leaves and serve with brown rice and black beans. Garnish with fresh cilantro, capers and olives.
- Mix all the spinach, mushrooms, onions, red bell peppers and goat cheese. Sprinkle with smoked paprika. Drizzle with Wish-Bone Fat Free Red Wine Vinaigrette salad dressing (or any dressing from the 11-25 calorie section on the exchange list) over salad and enjoy!
