Instructions
  1. Preheat the oven to 350° F. Line two baking sheets with parchment paper and coat with cooking spray. Set aside.
  2. In a mixing bowl, combine the oil, egg substitute, applesauce, brown sugar blend, and vanilla. Mix well and set aside.
  3. In a large bowl, stir together the oats, flour, baking soda, baking powder, cinnamon, and nutmeg.
  4. Make a well in the center of the dry ingredients. Add the applesauce mixture to the dry ingredients all at once and mix well.
  5. Stir in the carrots. Scoop a heaping tablespoon of batter onto the baking sheet. Repeat to create a total of 24 cookies (2 sheets of 12). Space them about 2 inches apart.
  6. Bake for 15 minutes. Set aside to cool.
  7. In a mixing bowl, beat the filling ingredients until smooth and fluffy. Once the cookies have cooled, spread a layer of frosting between 2 cookies, evenly distributing frosting among the cookies.
