Instructions
  1. Preheat your oven to 400 ºF. Oil a 9" x 13" baking dish with 2 tsp. of olive oil and set aside.
  2. Grind the chiles, cumin, cardamom, coriander, and peppercorns in a coffee grinder or small food processor until fine. Mix the spices with the olive oil in a large bowl.
  3. Add the veggies and toss to coat with the spice-oil mixture. Transfer the vegetables to a baking dish and roast until they are tender, about 1 hour, stirring every 20 minutes. Sprinkle with kosher salt and a squeeze of lemon and serve.
  4. Divide between 10 plates, or serve up about 1 1/4 cup of veggies per person.
