California Steak Salad

- 1 large red onion cut into 1/4" thick slices
- 2 tbsp. extra virgin olive oil (or canola oil)
- 1 tbsp. balsamic vinegar
- 1/2 tsp. kosher salt
- 1/4 tsp. freshly ground black pepper
- 3 medium heirloom tomatoes diced
- 1 5 oz. container baby arugula
- 8 oz. beef tenderloin cooked with salt and pepper seasoning (grassfed): to desired amount
- 1 ripe avocado peeled and sliced
- 1/2 cup fresh basil thinly sliced
- 1/4 cup almonds sliced and toasted only for 500 calorie

- Heat a grill pan or pan on top of stove over medium- high heat. Coat pan with cooking spray. Add onion slices to pan; grill 8 - 10 minutes or until tender, turning occasionally. Place onion in a bowl; cover with plastic wrap. Let stand 10 minutes.
- Combine vinegar, oil, salt and pepper in a large bowl, stirring with a whisk. Add onion slices and any accumulated juices to oil mixture. Add tomatoes; toss gently to coat. Let stand 20 minutes, stirring occasionally. Stir in arugula.
- Divide tomato mixture evenly among 4 plates; top evenly with steak and avocado. Sprinkle with basil and almonds.
- Each serving has 2 oz. steak and 1 1/2 cup salad mix.
- If you don't want to make the dressing from scratch use 2 Tablespoons of Wish-Bone Light Italian Dressing (or any dressing on the exchange list from the 11-40 calorie list.)

Serve 1 1/2 cups salad with 2 ounces of steak with:
1 - 80 Calorie Dannon Light & Fit Greek Yogurt Strawberry Flavor (or any flavor)
1 cup - Fresh Sliced Strawberries, can mix into yogurt (or any fruit from the 50 Calorie Fruit List)

Serve 1 1/2 cups of salad with 2 ounces of steak with:
1 - 80 Calorie Dannon Light & Fit Greek Yogurt Strawberry Flavor (or any flavor)
1 cup - Sliced or cubed Fresh Pineapple any fruit from the 100 Calorie Fruit List)
Plus 10 Raw Whole Almonds (can add to salad if desired).
