Instructions
Buttermilk Rice, Chicken and Cheddar Casserole
  1. Preheat oven to 400ºF.
  2. Bring stock to a boil in a large pan over medium-high. Add chicken; reduce heat and simmer 15 - 20 minutes or until chicken is done. Drain. Once chicken is cool enough to handle, shred into pieces.
  3. Cook broccoli according to package directions. Combine broccoli, chicken, and next 5 ingredients (through pepper) in a large bowl. Stir in eggs. Spoon mixture into a 10 " square glass or ceramic baking dish coated with cooking spray. Bake for 15 minutes. Top with 3 oz. cheese (about 3/4 cup). Bake for 10 minutes or until casserole is bubbly and cheese is melted.
Baby Spinach Salad
  1. Toss 2 cups of spinach, and 1/8 cup of each of the other veggies in a bowl, add the dressing, mix and transfer to a serving bowl. Repeat times 6, if 6 people will be enjoying the casserole. Otherwise, just toss the appropriate number of salads.
