Instructions
  1. In a large saucepan, heat 1 tablespoon olive oil over medium heat.
  2. Add 1 cup brown rice and sauté until grains turn golden brown.
  3. Slowly add 3 cups water, bouillon, onion, mushrooms and nutmeg.
  4. Boil, reduce heat, cover and simmer 30 minutes.
  5. Add water as needed to keep from drying out.
  6. Stir asparagus into rice, cover and cook 5 minutes.
  7. Stir in Swiss cheese.
