Instructions
Broiled Chicken
  1. Coat chicken breast with olive oil, garlic, salt and pepper.
  2. Place chicken breast on broiler pan and broil until internal temperature is 165 degrees.
Italian Roasted Snap Peas
  1. Preheat oven to 425°F.
  2. Cut leek halves into 2" lengths and then very thinly slice each piece lengthwise, yielding 2" long strips. Toss the leek strips, peas, oil and salt in medium bow. Spread evenly on a baking sheet.
  3. Roast for 15 minutes. Stir in tomatoes. Return to oven and roast until the vegetables begin to brown, about 10 minutes more. Toss with oregano and serve.
  4. Makes 4 servings.
Baby Arugula, Cucumbers, Tomatoes, Onions and Feta Cheese Salad
  1. Mix one serving of the baby arugula, cucumbers, tomatoes, onions and feta cheese together. Sprinkle with onion and/or garlic powder. Drizzle with Cucumber Ranch Dressing over salad and enjoy.
  2. Make 4 servings by multiplying the ingredients by 4.

1 cup of pineapple (or any fruit from the 100 Calorie Fruit list)
20 Raw Almonds-may slice and add to the salad.
