Instructions
  1. For the Gourmet version: Bring water in a pan to a boil. Add rice and continue to boil without a lid until cooked, 30-40 minutes.
  2. For the Lickity Split version: Use a quick cook type of rice, and follow the directions on the package.
  3. In a large skillet, add black beans with liquid, salt, onions, garlic, garlic powder, cumin, and lime juice. Bring to a boil, reduce to a simmer, and let cook until most of the liquid is absorbed.
  4. Remove from heat and add cilantro and spinach. Cover and let wilt. Mix in with black beans.
  5. Place ½ cup of rice on 6 plates, then evenly divide the bean mixture and spoon over the rice. Add hot sauce if desired.
