Instructions
  1. Mash 1 medium banana in a bowl until smooth.
  2. Mix in 1/2 cup egg beaters and 2 tsp. of ground cinnamon.
  3. Spray a very large nonstick skillet with cooking spray and heat over medium heat.
  4. Once the skillet is hot, pour the pancakes, approximately 1/8 cup each (use all the batter). Cook until golden brown, about 3-4 minutes per side. Carefully flip the cakes with a flat spatula as they are delicate.
  5. While the pancakes are cooking, mix 1 tsp. of pure maple syrup, 1 tsp. of water in a microwavable bowl, heat for 1 minute, add 3 tbsp. of coarsely chopped raw walnuts.
  6. Pour over pancakes.
Recipe Notes

500 Calories

Serve with 3/4 cup of fat free cottage cheese with 1 cup of blueberries (or any fruit from the 50 calorie list); you can mix the blueberries into the cottage cheese and add Splenda to taste if desired. Enjoy with a cup of hot green tea.
