Asparagus and Prosciutto Di Parma Wraps

Ingredients
- 12 jumbo asparagus spears (about 6 oz.)
- 1/8 cup extra virgin olive oil divided
- 1 tsp. kosher salt optional (prosciutto is salty), or salt substitute
- coarsely ground black pepper
- 12 slices prosciutto di parma or speck thinly sliced (about 3 oz.)
- fresh Parmigiano-Reggiano cheese for grating

Instructions
- Preheat a baking sheet in a 550°F oven.
- Snap stems off asparagus, place in a bowl and toss with 1/8 cup olive oil, salt (optional) and pepper.
- Open oven and carefully spread asparagus in a single layer on baking sheet.
- Bake until browned but still al dente, 7 to 10 minutes. Remove from oven; cool slightly.
- Drape 1 slice of prosciutto in a semicircle on each plate and lay 1 asparagus spear on top. Repeat with 1 more spear and slice of prosciutto.
- Drizzle each plate with 1 tbsp. of remaining oil, then sprinkle with pepper and cheese to taste.
